The doc says that this is a valid e-mail address John Doe <jd@mail.com>

I have the name in one field, the e-mail address in another. I could just
add the "<" and ">" and fine.

I am just worried abut "<" or ">" that might be in the name. The user might
have entered them.

Is there any other character that I should exclude like "$%&^'" and so on ?
I assume  and so on are correct ?

The e-mail is checked, so it is okay, I am just wondering about the Name
Part.

Any help is very appreciated.

Stephan,
just to be safe include the name into double quotes (") and you will be 
fine!
Example:
"John Doe" jd@mail.com
"Mr. <Big>" mr.big@fat.com

That sounds easy, Then I only need to make sure there are no double qoutes
in the name
